I started cooking in 2003 with Prince of Peace Lutheran Men’s Group. In 2005 I started Southern Swine BBQ Team. We cooked all Southaven Springfest ever year and a few other competitions. I have a few top 12 finishes, one 2nd place in pulled pork, a few ancillary top 3 finishes.
I meet my beautiful wife at Springfest in 2008 who now cooks with me. I meet Brian Bruce in 2018 and decided to start cook more competitions. This is when we started Mississippi Meat Mafia with a few other good men. In the last few years first place wins in SCA events including the world steak competition semifinals and the kickoff. We also have several top place finishes in chicken, ribs and other ancillaries including a 3rd place win at Memphis In May in seafood.
Jamie Smith is a Pit Master on the Mississippi Meat Mafia Competition BBQ team. Jamie competed with team Limp Brisket between 2013 and 2017. In 2018 Jamie Smith, Brian Bruce, Jay Hughbanks, and Sean Ray formed the Mississippi Meat Mafia Competition BBQ team. Jamie has gotten several calls while competing with Mississippi Meat Mafia. He got a 5th place chicken call at Smoking on the Rez in 2018, a 2nd place appetizer call at Good Ole Boys BBQ Competition in 2018, and 1st place steak at the Wild Wagon Weekend SCA competition in 2019. Jamie is a member of the Kansas City BBQ Society and Steak Cookoff Association. Jamie has a ServSafe Food Handler ANSI accredited certification.
Jay Hughbanks is a backyard grill, barbecue and cooktop aficionado. With multiple wins on the Steak Cookoff Association (SCA) circuit, including the biggest events at Memphis, TN and Ft. Worth, TX. including a flight win at the World Championship, he has what it takes to give the big boys a run for their money. So much so that the IRS can’t help but take their “fair” share of his winnings. He also has a passion for pork, chicken, fish and sarcasm.....about any way you can serve it.
Lives in Southaven, MS Graduated: Bachelors Degree at University of Illinois, Masters Degrees at USF and Gonzaga University Work- Siemens, Head of America’s Optimization BBQ experience: In 2012 learned to cook BBQ from John David Wheeler, Nick Woolfolk and Scott Guy.
